Addysgu

Mae Ruth yn darlithio mewn maeth ar draws llawer o'r rhaglenni yn yr Adran Gofal Iechyd a Bwyd gan gynnwys Maeth a Deieteg Dynol, Gwyddor Bwyd a Thechnoleg, Ymarfer Iechyd a Maeth, Iechyd a Gofal Cymdeithasol a Therapïau Cyflenwol.  Mae hi hefyd yn darlithio mewn Hybu Iechyd, Dulliau Ymchwil, Datblygu Cynnyrch Newydd, Dadansoddi Synhwyraidd a Materion Bwyd Cynaliadwy.

Ymchwil

Mae diddordebau ymchwil Ruth ym maes hyrwyddo dietau cynaliadwy, blasus, fforddiadwy, hygyrch a'r cysylltiad rhwng iechyd y geg a iechyd cyffredinol.  Mae hi'n cydweithredu yn yr ymchwil hwn gyda chydweithwyr ym Mhrifysgol Caerdydd.
